SOURDOUGH BREAD
Sourdough
bread is prepared with a sourdough starter. A sourdough starter is a fermented mixture of flour and natural yeast. It is more digestible as compared to regular
bread because its gluten is broken down by the fermentation process.
INGREDIENTS:
White Flour: 250 grams
Flour: 4
tablespoon full
Sourdough
starter: 80 grams
Water: 1 cup
Salt: As per
taste
Diastatic
malt powder: 2 grams
METHOD:
Take a cup of
water in a bowl and add 80 grams sourdough starter. Sourdough starter should
float on the surface if it is ready to use.
Next, add 250
grams white flour followed by normal flour and mix it. Add salt during mixing.
Thoroughly
mix these ingredients to get a uniform mixture.
Now cover it with
plastic wrap and leave for 1 hour.
Take out the
dough, moisten your hands and fold and unfold the dough several times and make
It a ball again.
Now again cover
it again for one hour.
Now take out
the dough again fold and unfold the dough several times and make its ball

Now take out
the dough and place it on the table.
Now spread a
kitchen towel in a plastic basket, sprinkle some flour on it, place the dough
sprinkle some flour over the dough, and cover it rolling up the towel.
Put this
basket in the fridge for a minimum of 12 hours.
After that
take out the basket and leave it for 4 to 5 hours at room temperature.
Pre-heat the
oven at 220°C to 240°C putting your baking utensil inside it along with the
lid.
Take baking
paper and place the dough on it.
Lift the sourdough
bread along with baking paper and put it into baking utensil and place the lid
over it.
Bake it for
20 minutes by covering with the lid.
Now remove
the lid and bake for another 20 minutes until the crust is darker in color.
