Mutton Yakhni Pulao: Mutton broth simmered yummy rice
Mutton Yakhni Pulao is a delicious and traditional meal in Pakistan and is finger-licking good. This recipe is a special gift for your kitchen.
Ingredients:
Mutton:
1 kg
Rice: 4 cups
Onion: 2~3
Green Peppers: 4-6
Yogurt: 1
cup
Ginger Garlic Paste: 3 tbsp
Green cardamom: 3-4
Black cumin: 1
tbsp
Cinnamon: 2 inches
Cloves: 6-8
Black pepper: 7-8
Oil: 1 cup
Salt: to taste
Stock Ingredients:
Onion: 2
pieces
Garlic: 2
bulbs
Ginger: 1
piece
Black cardamom: 2 (whole)
White cumin: 1 tbsp
Fennel: 1
piece
Coriander seeds: 1 tbsp
Salt: as
required
PROCEDURE:
· In a
large saucepan, add mutton, 7.5 glasses of water, whole onion, salt, garlic and
ginger.
· Take a
muslin cloth, add fennel seed, whole coriander, black cardamom, and white cumin.
Tie it tightly and dip it in the saucepan.
· Now
cook this for about forty-five minutes, do not separate the meat from the stock
until the meat is done.
· Heat the
oil in another pan. Add crushed onions and fry until it changes to golden
brown color.
· Now add
the meat, separated from stock, in it and fry for 4 to 5 minutes till the color
changes.
· Now
add yogurt, ginger garlic paste, green cardamom, black cumin, black pepper,
cloves & green chilies. Fry the gravy for a few minutes, and cook until the
oil forms a layer on the gravy.
· Add
the stock and wait until the mixture starts to boil.
· Now
remove water from rice and add the rice to the saucepan. Add salt and cook over
medium heat until the water is dry. Cover and cook on low heat for 8-10 minutes
until escaping steam reduces.
· Serve with Mint, Tomato, Green Coriander, Garlic & Green Chilli Sauce
